Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. Drain and pat dry the chickpeas, then cube the honeynut squash into bite-sized pieces. Toss with olive oil, garlic powder, salt, and pepper on a sheet pan and roast for 25 minutes.
  3. After 25 minutes, add kale to another sheet pan, sprinkle with salt and pepper, and roast for an additional 7 minutes until crispy yet tender.
  4. Meanwhile, bring salted water to a boil. Add orzo and cook until al dente (8-10 minutes). Drain and drizzle with olive oil.
  5. In a bowl or mason jar, combine maple syrup, lime juice, olive oil, vinegar, and shallots. Whisk until emulsified.
  6. In a large bowl, combine roasted kale, orzo, chickpeas, honeynut squash, parsley, pistachios, and cranberries. Toss with vinaigrette.
