Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare a 9x13-inch baking dish with cooking spray.
  2. Slice your large bell peppers in half lengthwise, removing seeds. Place cut side down in the baking dish and bake for about 10 minutes.
  3. In a skillet over medium heat, pour olive oil and add minced garlic. Sauté for 1-2 minutes until fragrant.
  4. Add 1 pound of lean ground beef to the skillet and cook for 6-8 minutes until browned.
  5. Stir in ground cumin, dried oregano, salt, and chili powder. Then add cooked rice, frozen corn, diced tomato, and fresh chopped cilantro. Mix well and remove from heat.
  6. Turn the baked pepper halves cut side up and fill them with the beef mixture.
  7. Sprinkle shredded cheese over the stuffed peppers.
  8. Bake uncovered for about 15 minutes until the cheese is melted and bubbly.
  9. Let cool slightly, then top with sour cream and chopped cilantro before serving.
