  • 2 large Eggs Flax eggs can be used for vegan option.
  • 2 tbsp Olive Oil Can replace with neutral cooking oil.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Grate the zucchini and squeeze out excess moisture using a kitchen towel.
  3. In a mixing bowl, combine zucchini, almond flour, herbs, cheese, eggs, and olive oil.
  4. Transfer the mixture to a lined baking sheet and shape into a rectangle or circle, about ½ inch thick.
  5. Bake for 25-30 minutes until golden brown and crisp at the edges.
  6. Allow to cool slightly for 5 minutes, then slice and serve.
