Baking Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Cream together butter and sugar until light and fluffy, about 3-5 minutes.
- Add the egg, vanilla, almond, and lemon extracts, and mix until well combined, 1-2 minutes.
- In a separate bowl, whisk together flour, salt, and baking soda. Gradually mix into the wet ingredients.
- Fold in the chopped candied fruit and pecans until evenly distributed.
- Drop heaping spoonfuls of dough onto the prepared cookie sheet, spaced 3-4 inches apart.
- Bake for 20-25 minutes until edges are golden but centers are slightly soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
