Method
 

Baking Instructions
  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Cream together butter and sugar until light and fluffy, about 3-5 minutes.
  3. Add the egg, vanilla, almond, and lemon extracts, and mix until well combined, 1-2 minutes.
  4. In a separate bowl, whisk together flour, salt, and baking soda. Gradually mix into the wet ingredients.
  5. Fold in the chopped candied fruit and pecans until evenly distributed.
  6. Drop heaping spoonfuls of dough onto the prepared cookie sheet, spaced 3-4 inches apart.
  7. Bake for 20-25 minutes until edges are golden but centers are slightly soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
