Step‑by‑Step Instructions
  1. Rinse the dried shiitake mushrooms under cold water and soak them in hot water for about 2 hours or overnight until fully rehydrated.
  2. Heat a medium pot over medium heat and add neutral oil. Add the rehydrated shiitake mushrooms and minced ginger, sautéing for 2-3 minutes.
  3. Stir in the sliced daikon radish and pour the reserved soaking liquid, then add star anise, bay leaf, oyster sauce, and light soy sauce. Cover and simmer for 20-25 minutes.
  4. Check on the daikon occasionally and add water if needed to avoid burning. Stir gently to ensure even cooking.
  5. Mix cornstarch with cold water to prepare the slurry, then stir it into the pot to thicken the sauce and coat the ingredients.
  6. Remove from heat, serve warm, and garnish with chopped scallions before serving.
