Preparation Steps
- Soak the black-eyed peas in plenty of water for 6-8 hours to achieve softness.
- Drain the soaked peas and shake off excess water.
- Blend the drained peas with red onion, cilantro, Scotch bonnet or habanero pepper, and salt until smooth.
- Scoop and shape the blended batter into golf ball-sized spheres.
- Heat peanut oil in a frying pan over medium-high heat until it reaches 350°F (175°C).
- Lower the balls into hot oil and fry for 3-4 minutes on each side until golden brown.
- Drain the fried Akara balls on paper towels and serve warm.
