  • 1 cup Cilantro Substitute with parsley or basil if desired.
  • 1 teaspoon Salt Adjust to taste.
  • 2-3 cups Peanut Oil For deep frying.

  • 1 cup Gluten-Free Flour Use instead of regular flour.
  • 1 cup Feta or Shredded Cheese Mix in for a rich flavor.

Method
 

Preparation Steps
  1. Soak the black-eyed peas in plenty of water for 6-8 hours to achieve softness.
  2. Drain the soaked peas and shake off excess water.
  3. Blend the drained peas with red onion, cilantro, Scotch bonnet or habanero pepper, and salt until smooth.
  4. Scoop and shape the blended batter into golf ball-sized spheres.
  5. Heat peanut oil in a frying pan over medium-high heat until it reaches 350°F (175°C).
  6. Lower the balls into hot oil and fry for 3-4 minutes on each side until golden brown.
  7. Drain the fried Akara balls on paper towels and serve warm.
