Raspberry Filling

Chocolate
  • 1 cup Semi-Sweet Mini Chocolate Chips dark chocolate chips can be used for a richer flavor

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line an 8x8-inch baking pan with parchment paper.
  2. In a large mixing bowl, blend rolled oats, flour, brown sugar, baking powder, and salt.
  3. Cut cold butter into small cubes and mix with dry ingredients until it resembles coarse crumbs.
  4. Press two-thirds of the oat mixture into the bottom of the baking pan and bake for 10 to 13 minutes.
  5. Mix raspberries, jam, and vanilla extract in a medium bowl while the crust is baking.
  6. Layer raspberry mixture over the baked crust and sprinkle half of the chocolate chips on top.
  7. Crumble remaining oat mixture over raspberry layer and bake for another 22 to 25 minutes.
  8. Once baked, add remaining chocolate chips on top while warm and let cool completely before slicing.
