Preparation
- Preheat your oven to 375°F (190°C). Line an 8x8-inch baking pan with parchment paper.
- In a large mixing bowl, blend rolled oats, flour, brown sugar, baking powder, and salt.
- Cut cold butter into small cubes and mix with dry ingredients until it resembles coarse crumbs.
- Press two-thirds of the oat mixture into the bottom of the baking pan and bake for 10 to 13 minutes.
- Mix raspberries, jam, and vanilla extract in a medium bowl while the crust is baking.
- Layer raspberry mixture over the baked crust and sprinkle half of the chocolate chips on top.
- Crumble remaining oat mixture over raspberry layer and bake for another 22 to 25 minutes.
- Once baked, add remaining chocolate chips on top while warm and let cool completely before slicing.
