  • 1/2 cup Fresh Dill Enhances flavor compared to dried.
  • 1/2 piece Red Onion Finely sliced; can substitute with green onions.
For the Dressing
  • 1/2 cup Greek Yogurt Or plain full-fat yogurt; use dairy-free for vegan.
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 piece Lemon Juice freshly squeezed.
  • 1 clove Garlic Grated.
  • to taste Salt Fine salt mixes in smoothly.
  • to taste Black Pepper

Method
 

Steps
  1. In a small mixing bowl, combine Greek yogurt, extra virgin olive oil, lemon juice, grated garlic, salt, and black pepper. Whisk until smooth and creamy.
  2. Slice cucumbers lengthwise and cut into 3mm thick half-moons. Finely slice red onion.
  3. In a large mixing bowl, combine sliced cucumbers, red onion, and fresh dill. Pour the dressing over and toss until well-coated.
  4. Serve immediately at room temperature, or refrigerate for 10-15 minutes before serving.
