Step-by-Step Instructions
  1. Prepare the black beans by soaking overnight or boil for 2 minutes and let sit for an hour.
  2. In a Dutch oven, heat 2 tablespoons of olive oil over medium heat and add 1 diced onion and 1 chopped green bell pepper. Sauté until softened.
  3. Stir in 4 minced garlic cloves, 2 teaspoons of cumin, and 2 tablespoons of tomato paste. Cook for another 2-3 minutes.
  4. Add the soaked black beans and 4 cups of chicken broth to the pot. Bring to a boil then simmer for about 1 hour.
  5. Cook rice according to the package instructions, approximately 15-20 minutes for white rice or 40-45 minutes for brown rice.
  6. Plate the fluffy rice, ladle the beans over the rice, and garnish with fresh cilantro or lime wedges before serving.
