- Lightly spray the inside of a 6-quart slow cooker with non-stick cooking spray to prevent sticking.
- Place all "Add First" ingredients into the slow cooker, including the chicken, minced garlic, cream-style sweet corn, frozen corn, black beans, and diced green chiles. Stir gently to combine.
- Cover the slow cooker and set it to cook on high for 3–5 hours or low for 4–6 hours until the chicken shreds easily.
- Carefully remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken back into the pot.
- Gradually stir in the shredded cheddar cheese and then mix in the half-and-half until fully combined.
- Ladle the chowder into bowls, topping with garnishes like fresh cilantro, jalapeño slices, or avocado.
