  • 2 cups shredded sharp cheddar cheese Swap for a dairy-free alternative if needed.
  • 2 cups half-and-half Feel free to use coconut milk for a dairy-free version.

Method
 

Step-by-Step Instructions
  1. Lightly spray the inside of a 6-quart slow cooker with non-stick cooking spray to prevent sticking.
  2. Place all "Add First" ingredients into the slow cooker, including the chicken, minced garlic, cream-style sweet corn, frozen corn, black beans, and diced green chiles. Stir gently to combine.
  3. Cover the slow cooker and set it to cook on high for 3–5 hours or low for 4–6 hours until the chicken shreds easily.
  4. Carefully remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken back into the pot.
  5. Gradually stir in the shredded cheddar cheese and then mix in the half-and-half until fully combined.
  6. Ladle the chowder into bowls, topping with garnishes like fresh cilantro, jalapeño slices, or avocado.
