- Shred the zucchini and wring out excess moisture with a clean kitchen towel.
- Grate the carrots, red onion, and garlic and combine in a bowl.
- Mix chia seeds with water and let it sit to form a gel.
- Combine shredded veggies, chia egg, and corn in a bowl and mix well.
- Add flour, cornmeal, baking powder, salt, and pepper to the mixture and stir gently.
- Shape the mixture into patties about 2-3 inches wide.
- Heat oil in a skillet, fry the patties in batches for 3-4 minutes until golden brown.
- Remove and drain on paper towels before serving.
