- In a large mixing bowl, combine ground chicken, crumbled feta, finely chopped red onion, minced garlic, lemon juice, zest, and fresh herbs—mint and parsley. Season with salt, mixing thoroughly.
- Slice your pita bread in half to create pockets, and carefully open them. Spoon the chicken and feta filling inside each pocket and seal the edges gently.
- Heat olive oil in a large skillet over medium heat. Once hot, place the stuffed pita pockets in the pan and cook for 3-4 minutes on each side until golden brown.
- For extra crispiness, preheat your oven to 180°C (350°F). After frying, transfer the crisped arayes to a baking sheet and place in the oven for about 10-15 minutes.
