Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Heat a couple of tablespoons of olive oil in a heavy-bottom skillet over medium-high heat until shimmering.
  3. Season the chicken leg quarters on both sides with kosher salt and fresh cracked pepper.
  4. Once the oil is ready, place the chicken leg quarters skin-side down in the skillet.
  5. Sear for 5-7 minutes until golden brown, then flip and sear the other side for an additional minute.
  6. Transfer the chicken to a lined baking sheet with skin side up and roast in the preheated oven for 20-25 minutes.
  7. Ensure the chicken reaches an internal temperature of 165°F (74°C).
  8. Let the chicken rest for a few minutes before serving.
