- Grate the zucchini using a box grater and sprinkle with salt, let sit for 5 minutes, then squeeze out excess liquid.
- In a bowl, combine squeezed zucchini, ground chicken, garlic, chives, salt, and pepper. Mix until incorporated and form into 12 patties.
- Blend cilantro, garlic, mayonnaise, cottage cheese, and vinegar in a food processor until smooth. Chill for 30 minutes.
