Preparation Steps
  1. Prepare the Chicken: Place the chicken breasts between plastic wrap and pound to 1/2 inch thickness. Season with salt and pepper.
  2. Bread the Chicken: Set up a station with flour, whisked egg, and breadcrumb mixture. Dredge chicken in flour, then egg, then breadcrumbs.
  3. Heat the Oil: Heat olive oil in a skillet over medium heat to 325°F (165°C). Test with a breadcrumb to check if ready.
  4. Fry the Chicken: Add chicken to hot oil and cook for 3-4 minutes per side until golden brown. Transfer to paper towels.
  5. Cook the Tomatoes: Sauté cherry tomatoes in olive oil until blistered. Add minced garlic and lemon juice towards the end.
  6. Assemble the Dish: Place a chicken breast on each plate, top with tomatoes, and chunks of burrata cheese.
