- Preheat the skillet over medium-high heat for about 3 minutes until hot.
- Dip both sides of a tortilla into the seasoned Birria broth or brush a thin layer on.
- Place the tortilla in the skillet, add 1/4 cup of Birria meat, and top with cheese and mushrooms.
- Fold the tortilla over and cook for 1-2 minutes until golden brown.
- Flip and cook the other side for another 1-2 minutes until golden and the cheese is melted.
- Remove and let it rest for a minute before slicing and serving.
