Step-by-Step Instructions
  1. Prep Chickpeas: Soak dried chickpeas in water for 24 hours. Drain and rinse before using.
  2. Mix Ingredients: Combine soaked chickpeas, shallot, garlic, herbs, spices, lemon zest, baking powder, and olive oil in a food processor. Pulse until finely chopped.
  3. Form Falafel Balls: Use a 2-tablespoon scoop to form the mixture into balls. Keep them slightly loose and spaced apart on a tray.
  4. Bake: Preheat the oven to 400°F (200°C). Arrange falafel balls on a lined baking sheet. Drizzle with olive oil and bake for 14 minutes, flip and bake for an additional 10-12 minutes until golden brown.
  5. Serve: Warm pita and stuff with baked falafel, diced veggies, pickled onions, and your dips.
