  • 1 large Granny Smith Apple Pink Lady can also be used.
  • 1 teaspoon Ground Cinnamon Optional; can be omitted.
  • 2 cups Sweet Potato Diced; keeping skins on adds texture.
  • 1 tablespoon Fresh Thyme Leaves Rosemary can be used as a substitute.
  • Kosher Salt To taste.
  • Black Pepper To taste.
  • 1 large Egg Optional; can be omitted for vegan.

Method
 

Step-by-Step Instructions
  1. Heat a cast-iron skillet over medium heat for about 2 minutes. Add olive oil and swirl until shimmering.
  2. Add diced pancetta and cook for 2-3 minutes until crispy. Remove and drain on paper towels.
  3. In the same skillet, add diced onion, salt, and pepper. Sauté for 2-3 minutes until translucent.
  4. Stir in diced Granny Smith apple and ground cinnamon. Cook for about 5 minutes until softened.
  5. Remove apple and onion mix. Add diced sweet potatoes and season. Cook for about 9 minutes until crispy.
  6. Combine the cooked pancetta, apples, and onions back into the skillet with thyme leaves. Stir over low heat for 1 minute.
  7. Fry an egg to desired doneness in a separate skillet.
  8. Serve the hash topped with the egg and extra thyme if desired.
