  • 1/2 cup Sunflower Seeds or replace with almonds or walnuts
  • 1/4 cup Fresh Parsley or Mint Leaves for garnish
For the Dressing
  • 1/2 cup Greek Yogurt or Mayonnaise or use vegan alternatives
  • 2 tablespoons Honey adjust based on sweetness preference
  • 2 tablespoons Apple Cider Vinegar
  • 1 pinch Salt to taste
  • 1 pinch Pepper to taste

Method
 

Preparation Steps
  1. Wash the broccoli thoroughly under cold water and cut into bite-sized florets.
  2. Core and dice the Honeycrisp apples into bite-sized pieces.
  3. Thinly slice the red onion into delicate rings.
  4. In a medium bowl, combine Greek yogurt or mayonnaise with honey, apple cider vinegar, salt, and pepper; mix until smooth.
  5. In a large mixing bowl, combine broccoli, apples, onion, dried cranberries, and sunflower seeds.
  6. Drizzle the dressing over the salad and toss gently until well coated.
  7. Cover and refrigerate for at least 30 minutes.
  8. Before serving, toss the salad again and garnish with parsley or mint leaves.
