- In a medium saucepan, gently mix together the whipping cream, unsweetened almond milk, chia seeds, granulated monkfruit sweetener, eggs, vanilla, and salt.
- Place the saucepan over medium heat and continuously whisk the mixture as it warms for about 5-8 minutes until it’s nearly at a boil and thickened.
- Once thickened but not boiling, remove the saucepan from heat and whisk vigorously to prevent the eggs from scrambling.
- Off the heat, stir in the optional butter and ground cinnamon until fully melted and incorporated.
- Spoon the warm pudding into bowls and top with your choice of fruits, nuts, or nut butter.
