Preparation
  1. In a medium saucepan, gently mix together the whipping cream, unsweetened almond milk, chia seeds, granulated monkfruit sweetener, eggs, vanilla, and salt.
  2. Place the saucepan over medium heat and continuously whisk the mixture as it warms for about 5-8 minutes until it’s nearly at a boil and thickened.
  3. Once thickened but not boiling, remove the saucepan from heat and whisk vigorously to prevent the eggs from scrambling.
  4. Off the heat, stir in the optional butter and ground cinnamon until fully melted and incorporated.
  5. Spoon the warm pudding into bowls and top with your choice of fruits, nuts, or nut butter.
