Ingredients

For the Base
  • 1 cup White Beans Fresh or canned, rinsed.
  • 1/3 cup Cashew Butter Can substitute with preferred nut butter.
For the Sweetness
  • 3 tablespoons Agave Syrup Maple syrup can be a substitute.
  • 1/4 teaspoon Fine Sea Salt Balances sweetness.
For the Vanilla Flavor
  • 1 whole Vanilla Beans Scrape seeds for maximum flavor.
  • 1 teaspoon Vanilla Extract

Equipment

  • food processor

Method

Preparation Steps
  1. If using dried white beans, soak them overnight, then boil in salted water for 60-90 minutes until tender. Allow to cool. For canned beans, drain, rinse well, and let drain thoroughly.
  2. In a food processor, combine agave syrup, cashew butter, scraped vanilla bean seeds, vanilla extract, and fine sea salt. Pulse until smooth—about 30 seconds.
  3. Add the prepared white beans to the mixture and blend for 1-2 minutes, scraping down sides as necessary, until ultra-smooth and creamy.
  4. Check the texture; if too thick, drizzle in a tablespoon of water and blend again until desired consistency is reached.
  5. Transfer to an airtight container and refrigerate for at least 30 minutes to allow flavors to meld.

Notes

Using homemade white beans is ideal. Sweetener alternatives can change the flavor; taste and adjust as needed. Allow the hummus to chill before serving for optimal flavor.
