Step-by-Step Instructions
  1. Begin by warming 2 tablespoons of olive oil in a large skillet over medium heat. Allow the oil to shimmer.
  2. Add 2 cloves of minced garlic to the hot oil and sauté for about 1 minute until fragrant.
  3. Season 1 pound of peeled and deveined shrimp with salt, pepper, and Italian seasoning. Cook for 2-3 minutes on each side until pink and opaque, then remove from skillet.
  4. In the same skillet, add ½ cup of sun-dried tomatoes and 2 cups of fresh spinach. Cook until spinach wilts and tomatoes soften.
  5. Pour in 1 cup of heavy cream, stirring gently. Bring to a gentle simmer without boiling.
  6. Stir in ½ cup of grated Parmesan cheese, mixing until melted and the sauce thickens.
  7. Return the cooked shrimp to the skillet, tossing them gently in the creamy sauce. Cook for an additional 2 minutes.
