Step-by-Step Instructions
  1. In a large pot, heat coconut oil over medium-high heat. Once hot, add diced carrot, diced onion, minced garlic, and minced ginger. Sauté for about 5-7 minutes until tender and fragrant.
  2. Stir in pumpkin puree and crushed tomatoes, mixing thoroughly. Then add chickpeas, uncooked lentils, coconut milk, vegetable broth, and a pinch of salt. Toss in chopped kale and stir until well mixed.
  3. Cover the pot loosely and let the mixture simmer on medium heat for about 20 minutes, stirring occasionally.
  4. Check for desired thickness after 20 minutes. For a thicker curry, simmer uncovered for an additional 5-10 minutes.
  5. Once at the perfect consistency, remove from heat. Serve warm, garnished with reserved coconut milk and optionally sprinkle with fresh herbs.
