- Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Place squash cut-side down in a baking dish with ½ cup of water. Bake for 30–35 minutes until tender.
- Heat olive oil in a large skillet over medium heat. Sauté diced onion and red bell pepper for about 5 minutes until soft. Add minced garlic and cook for another minute.
- Stir in chopped spinach, season with nutmeg, salt, and pepper. Cook until spinach wilts, about 2-3 minutes.
- Once the spaghetti squash has cooled, scrape out the strands into a bowl. Add softened cream cheese and mix until well combined. Stir in the sautéed vegetable mixture.
- Grease a casserole dish and transfer the mixture, spreading it evenly. Sprinkle mozzarella and parmesan cheese on top.
- Lower oven temperature to 375°F (190°C) and bake for 30 minutes until cheese is bubbly and lightly browned.
- Let the casserole rest for at least 15 minutes before slicing. Serve and enjoy!
