Method
 

  1. Preheat your oven to 375°F (190°C) and grease a 1½ quart casserole dish with avocado oil or butter.
  2. In a large mixing bowl, combine cooked shredded chicken, avocado oil or grass-fed butter, whole milk cottage cheese, and organic sour cream. Stir until fully blended.
  3. Add 1½ cups of shredded mozzarella, chopped fresh parsley, mineral-rich salt, garlic granules, and dried thyme. Stir in lemon juice and zest until well incorporated.
  4. Gently fold in fresh organic spinach and drained artichoke hearts, being careful not to over-mix.
  5. Pour the mixture into the greased casserole dish, smoothing the top with a spatula.
  6. Sprinkle the remaining ½ cup of shredded mozzarella evenly on top.
  7. Bake in the preheated oven for 40 to 50 minutes until the top is lightly golden brown.
  8. Remove from the oven and let the casserole rest for about 10 minutes before serving.
