  • 2 cups Great Northern Beans drained and rinsed
  • 3 cups Cubed Cooked Chicken Breast rotisserie chicken works well
  • 1 cup Alfredo Sauce can use homemade
  • 4 cups Chicken Broth or vegetable broth
  • 1 cup Frozen Corn fresh or canned can be substituted
  • 1 cup Sour Cream or Greek yogurt
Flavor
  • 1 cup Monterey Jack Cheese for creaminess
  • 1 cup Pepper Jack Cheese omit for milder flavor
  • 1 can Chopped Green Chiles or jalapeños for more heat
  • 1 medium Onion yellow or white
  • 3 cloves Garlic fresh or pre-minced
Seasoning
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon White Pepper or black pepper
  • 1/4 teaspoon Cayenne Pepper to taste
Optional Enhancements
  • 1 medium Sweet Yellow Pepper or red/green bell peppers
  • 1/2 cup Salsa Verde for topping
  • 1/4 cup Fresh Cilantro for garnish

Method
 

Preparation
  1. Begin by rinsing and draining the Great Northern beans to remove excess sodium.
  2. Chop the cubed chicken, onions, yellow pepper, and garlic cloves into bite-sized pieces.
  3. Gather all ingredients, including frozen corn and spices, for easy access.
Cooking
  1. In a 5- or 6-quart slow cooker, combine the prepared ingredients including beans, chicken, Alfredo sauce, broth, corn, and chopped vegetables.
  2. Add spices and stir gently to combine.
  3. Cover and cook on low for 3 to 4 hours, stirring occasionally.
Finishing Touches
  1. Once cooking is done, stir in sour cream and cheeses, and let sit for 15 minutes on low.
  2. Ladle into bowls and garnish with cilantro and salsa verde as desired.
