  1. Begin by bringing a large pot of salted water to a rolling boil over high heat. Add 1 pound of pasta shells and cook for about 7-8 minutes, or until just shy of al dente. Drain the pasta, reserving 1 cup of cooking water.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat until bubbling, about 1-2 minutes.
  3. Pour in the 12-ounce can of evaporated milk, stirring as it heats. Simmer for 3-4 minutes. Whisk in the 15-ounce can of pumpkin puree, 2 teaspoons of prepared mustard, and ¼ teaspoon of nutmeg until well combined.
  4. Gradually add 8 ounces of grated sharp cheddar cheese and ¾ cup of grated Parmesan cheese, stirring until melted and smooth.
