  • 1 medium Green Bell Pepper Red or yellow bell peppers can be used.
  • 2 cloves Garlic Fresh cloves are recommended.
  • 4 cups Beef Broth Opt for gluten-free if needed.
For Creaminess
  • 1 cup Heavy Cream Half-and-half can be used for a lighter version.
  • 1 cup Shredded Provolone Cheese Mozzarella or mild cheddar can be alternatives.
For Seasoning
  • Salt & Pepper Season to your liking.

Cooking Instructions
  1. Heat olive oil in a large pot over medium heat until shimmering, about 2 minutes.
  2. Add beef sirloin, cooking for 5-7 minutes until browned on all sides, then remove and set aside.
  3. In the same pot, add chopped onions, green bell pepper, and minced garlic. Sauté for 4-5 minutes until onions are translucent.
  4. Return the browned beef to the pot, add beef broth, and bring to a gentle simmer. Cook for about 15 minutes.
  5. Add heavy cream and shredded provolone cheese, stirring for 3-4 minutes until cheese is melted and soup is heated through.
  6. Season with salt and pepper to taste, mix well, and serve hot.
