  • 2 tbsp Olive Oil Substitute with avocado oil if desired
  • 1 Onion, diced Shallots can be used for a milder flavor
  • 1 can (14 oz) Fire-Roasted Tomatoes Regular canned tomatoes work in a pinch
  • 3 cloves Garlic, minced Fresh garlic is best
  • 2 small Carrots, diced Sweet bell peppers can be a great substitute
  • 1 medium Potato, diced Swap with sweet potato for added sweetness
For Seasoning
  • 1 tsp Oregano, dried Feel free to use fresh
  • 1 tsp Ground Cumin Optional
  • 1 tsp Smoked Paprika Regular paprika can be used
  • Red Pepper Flakes Optional for heat
  • 2 Bay Leaves Remove before serving
  • Salt and Pepper Adjust to taste
For the Liquid and Protein
  • 2 cups Vegetable Broth Low-sodium is preferred
  • 2 cans (14 oz each) Pinto Beans, drained and rinsed Dried beans can be used, soaked and cooked

Step-by-Step Instructions for Mexican Pinto Bean Soup
  1. Heat olive oil in a large pot over medium-high heat. Add the diced onion and sauté for 4-5 minutes until softened.
  2. Stir in the fire-roasted tomatoes, minced garlic, diced carrots, and diced potato. Add the oregano, cumin, smoked paprika, and red pepper flakes. Cook for 1-2 minutes.
  3. Add vegetable broth and bay leaves to the pot. Bring to a boil, then reduce heat and let simmer for 10-15 minutes.
  4. Mix in the drained pinto beans and simmer for another 10 minutes. Stir occasionally.
  5. Blend the soup to your desired consistency using an immersion blender.
  6. Adjust seasoning with salt and pepper. Serve hot, garnished with herbs and lime wedges.
