  • 8 oz Uncooked rotini pasta or gluten-free noodles
  • 1 can Black beans rinsed
  • 1 cup Corn canned or fresh
  • 1 cup Grape tomatoes halved

For the Dressing
  • 1 cup Plain Greek yogurt or low-fat sour cream
  • 1/2 cup Salsa mild, medium, or spicy
  • 2 tbsp Olive oil or avocado oil
  • 2 tbsp Apple cider vinegar or white vinegar
For Seasoning
  • 1 tsp Salt
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 1/2 tsp Black pepper

Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the rotini pasta according to package directions until slightly al dente, about 8-10 minutes. Drain and rinse under cold water to cool.
  2. Make the Dressing: In a medium bowl, whisk together Greek yogurt, salsa, olive oil, apple cider vinegar, and seasoning blend until creamy and smooth.
  3. Combine the Salad Ingredients: In a large mixing bowl, combine the cooled pasta, black beans, corn, grape tomatoes, and red onion. Toss gently to combine.
  4. Dress the Salad: Pour the dressing over the salad mixture and gently fold to coat everything evenly.
  5. Garnish and Serve: Sprinkle chopped cilantro over the top. Serve immediately or refrigerate for 30 minutes for enhanced flavor.
