  • 2 tablespoons lemon juice freshly squeezed

  • 1/4 cup fresh parsley roughly chopped
  • 1 cup crumbled feta or ricotta
  • 2 tablespoons extra virgin olive oil

  • 1/4 cup pitted olives chopped
  • 2 tablespoons nutritional yeast

Step-by-Step Instructions
  1. In a food processor, combine the drained and rinsed cannellini beans, minced garlic, fresh lemon juice, kosher salt, and ground pepper. Pulse for about 30 seconds until smooth.
  2. Add roughly chopped fresh parsley and crumbled feta to the mixture. Pulse for about 15 seconds until just combined.
  3. While the food processor is running, slowly drizzle in the olive oil and blend for 1 minute until smooth and creamy.
  4. Transfer to a serving bowl, taste, and adjust the seasoning if necessary. Garnish with additional feta or parsley.
