Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and sauté for about 4-5 minutes, until the onion becomes translucent.
  2. Incorporate 2 minced garlic cloves and 1 teaspoon of kosher salt into the pot. Cook for an additional minute, stirring well.
  3. Stir in 2 tablespoons of tomato paste, 1 teaspoon of sugar, and 1 teaspoon of dried basil. Cook for about 1 minute, allowing the flavors to meld.
  4. Pour in one 28-ounce can of whole tomatoes and 2 cups of low-sodium vegetable broth. Stir together, cover, and let simmer for 20 minutes.
  5. Blend the soup until smooth, adding 1 cup of cottage cheese while blending for creaminess.
  6. Return the soup to low heat. Taste and adjust seasoning with pepper and salt.
