  • 1 pound large shrimp deveined with tails on
For the Sauce
  • 2 tablespoons grass-fed butter or ghee olive oil works as a dairy-free substitute
  • 4 cloves garlic minced
  • 1 cup bone broth (chicken) vegetable broth is a non-meat alternative
  • 1 can canned coconut milk can be replaced with half & half or heavy cream
  • 1 tablespoon sun-dried tomatoes in olive oil julienned
  • 2 tablespoons nutritional yeast can be omitted
For the Vegetables
  • 1 medium yellow onion diced
  • 2 cups fresh spinach
For Seasoning
  • 1 teaspoon Italian seasoning or fresh herbs
  • to taste kosher salt
  • to taste black pepper

Method
 

Step-by-Step Instructions
  1. In a large skillet, melt butter or ghee over medium heat. Add minced garlic and sauté until fragrant.
  2. Add shrimps, cooking for approximately 2 minutes on each side until opaque.
  3. Increase heat and sauté diced onion for 2-3 minutes until translucent.
  4. Pour in bone broth, scrape browned bits, and simmer for about 5 minutes until reduced by half.
  5. Stir in sun-dried tomatoes and cook for an additional 2-3 minutes.
  6. Add coconut milk and nutritional yeast, stirring to combine; simmer for about 5 minutes.
  7. Add fresh spinach, stirring until wilted, about 2 minutes.
  8. Return shrimp to the skillet, season with salt and pepper, and simmer for 5-7 minutes.
  9. Serve over cauliflower rice or pasta, garnishing with lemon wedges and fresh parsley.
