Step-by-Step Instructions for Elote Queso
  1. Roast or grill fresh corn on the cob until charred and golden, about 8-10 minutes. If using frozen corn, heat in a skillet for about 5-7 minutes until hot. Let cool and cut kernels off the cob.
  2. In a large skillet, combine cheese, minced garlic, and diced jalapeño over medium heat. Stir continuously for about 5 minutes until cheese is melted and creamy.
  3. Stir in roasted corn, chopped cilantro, chili powder, and milk. Keep stirring for another 2-3 minutes until well combined and heated through.
  4. Transfer to a serving dish, drizzle sour cream on top if desired, and serve with lime-drenched tortilla chips or fresh veggies.
