Step-by-Step Instructions for Easy Homemade Dauphinoise Potatoes
  1. Preheat your oven to 190°C (375°F).
  2. Slice the Yukon Gold potatoes to approximately 3mm (1/8 inch) thick.
  3. In a saucepan, combine double cream, full-fat milk, Dijon mustard, minced garlic, and fresh thyme. Heat until simmering.
  4. Add the sliced potatoes to the cream mixture and cook for about 4 minutes.
  5. Layer the potato slices in an ovenproof baking dish and pour the creamy mixture over them.
  6. Top with freshly grated vegetarian cheddar cheese.
  7. Bake in the oven for about 30 minutes, turning halfway.
  8. Remove from the oven and let cool for 5-10 minutes before serving.
