Cooking Steps
- Begin by preheating your crockpot on the high setting. Coat the ceramic insert with cooking spray.
- Pour the chicken stock into the crockpot, followed by the minced garlic, cumin, oregano, salt, and crushed red pepper. Place the chicken breasts on top.
- Stir everything gently but thoroughly to combine the ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- When done, remove the chicken breasts from the crockpot and shred them on a cutting board using two forks.
- Return the shredded chicken back to the crockpot with the cooking liquid. Stir to combine.
- Add the drained great northern beans and shoepeg corn, stirring to incorporate evenly.
- Just before serving, stir in the fresh lime juice and chopped cilantro.
- Ladle the chili into bowls and garnish with lime wedges and additional cilantro before serving.
