  2. Roast the seasoned cauliflower uncovered in the oven for about 10 minutes, stirring halfway through.
  3. Melt 4 tablespoons of butter in a medium saucepan over medium heat. Whisk in 4 tablespoons of flour to create a roux.
  4. Gradually whisk in 2 cups of cream or milk into the roux until the mixture thickens, and then mix in the shredded mozzarella and cheddar.
