- Preheat your oven to 375°F (190°C). Slice the butternut squash in half, scoop out the seeds, and roast cut side down for about 30 minutes.
- Once cool, scoop the flesh into a blender and blend until smooth to create about 1 cup of puree.
- In a large skillet, heat olive oil over medium heat, add sausage, and cook until browned, about 6 minutes.
- Add gnocchi, heavy cream, and chicken broth to the skillet. Bring to a gentle boil, then reduce heat, cover, and simmer for about 5 minutes.
- Stir in the butternut squash puree and minced garlic. Simmer for another 5-7 minutes until the sauce thickens.
- Fold in fresh herbs and season with salt and pepper to taste. Allow to meld for a minute.
- Serve hot, garnished with remaining fresh herbs.
