Preparation Steps
- Prepare the starter by feeding your active sourdough starter 6 to 12 hours before baking.
- Sauté the apples in melted butter with lemon juice for 5-7 minutes. Stir in brown sugar and cinnamon to thicken.
- Mix the dough with flour, water, starter, and salt until shaggy. Let rest for 30 minutes.
- Incorporate the cooled apple mixture into the dough until evenly distributed.
- Cover and let rise for 3-4 hours, performing stretch and folds every 30 minutes.
- Shape the dough into a ball and rest for 15 minutes.
- Transfer dough to proofing basket and refrigerate for 12-16 hours.
- Preheat your Dutch oven to 450℉ for 30-45 minutes.
- Bake the bread for 40 minutes covered and an additional 5-10 minutes uncovered until golden brown.
- Cool on a wire rack for at least 2 hours before slicing.
