Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare your baking dish.
  2. Roast the sliced zucchinis, diced bell pepper, and halved cherry tomatoes with olive oil, oregano, garlic powder, salt, and pepper for 15 minutes.
  3. Mix the cottage cheese, eggs, and half of the mozzarella until smooth.
  4. Layer the roasted veggies in the baking dish, pour the cheese mixture over it, and spread evenly.
  5. Top with remaining mozzarella and Parmesan before baking.
  6. Bake the dish for 30-35 minutes until golden brown and bubbling with melted cheese.
  7. Allow to rest for 10 minutes before serving. Garnish with fresh herbs if desired.
