- Heat 2 tablespoons of coconut oil over medium heat until melted.
- Add 4 minced garlic cloves and 1 tablespoon of minced fresh ginger. Sauté for about 3 minutes.
- Add 3 cups of diced sweet potatoes and spices. Cook for 5 minutes.
- Stir in 1½ cups of red lentils, 3 cups of vegetable broth, lime juice, maple syrup, peanut butter, and crushed tomatoes. Mix well.
- Increase heat to bring to a boil, cover, then reduce to low and let simmer for 20-25 minutes.
- Once tender, stir in three-quarters of the coconut milk.
- Ladle into bowls and garnish with cilantro if desired.
