- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper or grease it with butter.
- Melt ½ cup of unsalted butter in a medium mixing bowl. Stir in 1 cup of light brown sugar until smooth and glossy.
- Add 1 egg and 1 teaspoon of pure vanilla extract to the mixture, and mix until well combined.
- Gradually add 1 cup of all-purpose flour and a pinch of salt to the wet ingredients, stirring gently until incorporated.
- Spread the blondie batter evenly in the prepared baking dish.
- Mix together 2 tablespoons of white sugar and 1 teaspoon of ground cinnamon for the topping, and sprinkle over the batter.
- Bake for approximately 22 minutes until the edges are golden and a toothpick comes out clean.
- Allow the blondies to cool in the baking dish for 10-15 minutes before lifting them out and cutting into squares.
