Preparation Steps
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter, granulated sugar, and brown sugar until light and fluffy, about 3–5 minutes.
- Add eggs one at a time and then mix in vanilla extract until fully combined.
- Whisk together flour, baking soda, salt, and cinnamon in a separate bowl. Gradually fold into the butter mixture.
- In another bowl, mix cream cheese, powdered sugar, and milk until smooth.
- Scoop cookie dough, flatten into a disk, place cheesecake filling in the center, and roll into a ball.
- Place cookie balls 2 inches apart on the prepared baking sheet and bake for 10-12 minutes.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
