  • 8 ounces Pasta Choose any shape like fettuccine or penne
For the Shrimp
  • 1 pound Shrimp Fresh shrimp preferred; thaw if frozen
For the Sauce
  • 1 cup Cilantro Chopped
  • 1 each Lime Use zest and juice
  • ½ cup Parmesan Cheese Grated; use nutritional yeast for dairy-free option
For Cooking
  • 2 tablespoons Olive Oil Great for sautéing
  • 1 tablespoon Butter For velvety texture; vegan butter is an option
  • 2 cloves Garlic Minced
For Seasoning
  • to taste Salt & Pepper Essential for flavor
  • ¼ teaspoon Red Pepper Flakes Optional for heat

Method
 

Cooking Instructions
  1. Cook pasta in salted boiling water until al dente, about 8–10 minutes. Reserve ½ cup of pasta water before draining.
  2. Sauté shrimp in olive oil, seasoned with salt, pepper, and red pepper flakes, for 2–3 minutes on each side until pink and opaque.
  3. Cook minced garlic in butter for 1 minute without browning.
  4. Combine drained pasta with garlic and butter in the skillet.
  5. Add lime zest, juice, cilantro, and Parmesan cheese. Stir and add reserved pasta water until desired creaminess is reached.
  6. Fold in sautéed shrimp and heat through for 1–2 minutes.
  7. Serve garnished with extra cilantro, Parmesan cheese, and lime slices.
