  • 1/4 teaspoon almond extract omit for nut-free
  • 1-1/3 cups all-purpose flour avoid overmixing
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chopped almonds or substitute with mix-ins

  • white chocolate chips for added sweetness
  • dried cranberries for a fruity contrast

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, beat together eggs, sugar, and brown sugar for about 3 minutes until fluffy.
  3. Pour in melted butter, vanilla extract, and almond extract; blend until smooth.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix into wet ingredients.
  5. Fold in chopped almonds and any optional mix-ins.
  6. Pour batter into a greased 8-inch baking pan and spread evenly.
  7. Bake for 25 to 30 minutes, checking for doneness with a toothpick.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
