Step-by-Step Instructions
  1. In a large mixing bowl, combine the mascarpone cheese and heavy cream. Beat the mixture on medium speed for 2-3 minutes until smooth and fluffy.
  2. Add the amaretto liqueur, cherry juice, and vanilla extract to the creamy mixture. Mix for an additional 1-2 minutes on low speed until well combined.
  3. In a separate bowl, gently combine the granulated sugar and cherry preserves until well blended. Integrate into the mascarpone base, mixing for about 1 minute.
  4. Fold in the chopped fresh cherries into the mascarpone mixture using a rubber spatula.
  5. In a shallow dish, mix equal parts of amaretto liqueur and cherry juice as the soaking liquid.
  6. Quickly dip each ladyfinger into the soaking mixture and arrange them in a 9x13 dish.
  7. Spread half of the creamy mascarpone mixture over the first layer of ladyfingers.
  8. Repeat the process by adding another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours or ideally overnight.
  10. Dust with cocoa powder and sprinkle with grated dark chocolate before serving.
