Instructions for Cheesy Cajun Beef Rice
- In a small bowl, combine the Cajun seasoning, paprika, garlic powder, onion powder, mayo, and Greek yogurt. Mix well until smooth and set aside.
- Spray a large, heavy-bottomed pan with low-calorie cooking spray and heat it over medium heat. Add onion, carrot, and garlic, sautéing for 5-6 minutes until softened.
- Add the extra lean beef mince to the pan, breaking it apart, and cook for about 6-8 minutes until browned.
- Stir in the Cajun seasoning, paprika, and tomato paste, cooking for an additional 1-2 minutes to bloom the spices.
- Add the chopped red bell pepper, dry rice, and chicken stock. Stir to combine and bring to a boil, then reduce heat and simmer for 12-15 minutes.
- Remove from heat and keep covered for an additional 10 minutes to steam the rice.
- Fluff the rice with a fork after resting, and season with salt and pepper to taste.
- Sprinkle the grated cheese on top and place under the broiler for 2-3 minutes until melted and bubbly.
- Garnish with chopped spring onions and drizzle with Cajun mayo before serving.
