For the Rice

Method
 

Sauté the Aromatics
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 3 minced garlic cloves and sauté for 1-2 minutes until fragrant.
Cook the Butternut Squash
  1. Stir in 2 cups of cubed butternut squash, 1 teaspoon each of dried thyme and rosemary, and season with salt and pepper. Cook for 3-5 minutes until the squash softens.
Add the Rice and Broth
  1. Pour in 1 cup of rinsed white rice and 3 cups of vegetable broth. Stir well and bring to a boil, then reduce to low heat and cover for about 20 minutes.
Prepare the Shrimp
  1. Pat the shrimp dry and heat a tablespoon of olive oil in a separate pan over medium-high heat. Sauté shrimp for 1-2 minutes on each side.
Combine and Finish
  1. Once the rice has absorbed all the liquid, fold in 1 cup of freshly grated Parmesan cheese and stir until melted.
