- Preheat your oven's broiler or grill to a high setting.
- Spray a frying pan with olive oil and add back bacon, cooking for about 5 minutes until golden brown. Remove bacon and leave drippings.
- In the same pan, sauté shallots, carrot, and celery for 4-5 minutes until softened. Add water to prevent sticking if necessary.
- Add minced garlic and extra lean beef mince, cooking for 5-7 minutes until browned. Stir in bacon.
- Stir in dried mixed herbs, chopped tomatoes, tomato paste, balsamic vinegar, and stock. Bring to boil, then simmer for 20 minutes.
- Add the gnocchi into the sauce, stirring gently. Cover and cook for an additional 5-8 minutes until tender.
- Season with salt and black pepper. Transfer mixture to a baking dish.
- Sprinkle grated mature cheddar over the top. Place under broiler for about 4 minutes until melted and golden.
- Let the bake rest for a couple of minutes, then garnish with fresh basil before serving.
