  • 1 cup Shredded Cheddar Cheese or mozzarella/feta
  • 1/2 cup Milk or non-dairy milk
For Seasoning
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Italian Seasoning or individual herbs to taste
  • Salt to taste
  • Pepper to taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and bell pepper and sauté for 3–4 minutes until softened.
  3. Add chopped spinach to the skillet and stir for another 2–3 minutes until wilted. Add garlic powder, salt, and pepper.
  4. In a bowl, whisk together eggs, milk, and cottage cheese until smooth. Mix in Italian seasoning, salt, and pepper.
  5. Fold the sautéed vegetables into the egg mixture and stir in shredded cheddar cheese.
  6. Grease a pie dish and pour the mixture in, smoothing the top with a spatula.
  7. Bake in the preheated oven for 40–45 minutes until golden and set in the center.
  8. Let the quiche cool for 5–10 minutes before slicing and serving.
